Happy Easter! I know sometimes this day gets overshadowed unfortunately by the Easter Bunny, Easter Egg hunts, and candy, but remember the real reason for our celebration today while trying to avoid over-stuffing yourself on ham and apple pie---that Christ died for our sins and today rose from the grave by the power of God. So celebrate, enjoy your family, and be sure to praise God however you and your family choose to do so!
And I don't know about you but we went grocery shopping for the week, we picked up a whole 2.5 dozen eggs, got home and realized that "Hey, honey... we already have 2.5 dozen hard-boiled eggs in the refrigerator... you realize we'll have to eat those this week, right?!" LOL!
So in honor of all the eggs we have in our fridge, I wanted to share 3 Recipes that might get you through this week and get rid of those eggs!
Eggs & Hummus Galore
Take out the yolks of two hard boiled eggs and pitch them (or save them to add into a salad later... they are a great source of healthy fat), scoop a little bit of hummus into each egg white. Sprinkle some paprika on them and eat up! You can also add in a few more egg whites if you wish if you're feeling particularly ravenous ;)
Easy Egg Salad Sandwich
Take two hard boiled eggs, crush/smash the eggs in bowl and mix in 1 Tbsp of Real Mayo (yes, not the light mayo or even the miracle whip which contains all kinds of crazy ingredients... if you want more info on why you want real mayo over light or miracle whip, check out Eat it to Beat It! Great Read ;) Spread the mixture onto your choice of bread or Napa Cabbage if you are going grain-free and add some romaine, tomato, and even avocado for some variety.

This is similar to recipe #1, just a little more fancy ;) So when I'm not in a hurry and feel like adding in a few more ingredients, this is a good option!
1 large hard-boiled eggs, cut in half, yolks removed and reserved.
4 tsp. mayonnaise
1 tsp. mustard
1 green onion, finely chopped
Sea salt and ground black pepper (to taste; optional)
1. Combine egg yolks, mayonnaise, mustard, and green onion in a medium bowl; mix until smooth.
2. Season with salt and pepper, if desired.
3. Fill each egg white with one-fourth of yolk mixture. Sprinkle with paprika if desired.
Makes 1 serving
